Weekend Basics
Mary and I had fun watching VCU bring their havoc to Brooklyn and kill it through 2 out of the 3 Atlantic 10 Championship games they played this weekend! While they didn't quite bring it all the way home in yesterday's game, we're both glad they will once again represent RVA in the big dance! I've been filling out March Madness brackets for as long as I can remember and have gotten Mary to join in on the fun ever since she moved back to Richmond 3 years ago — so this will be her 3rd bracket. Having VCU in the pool always makes things more interesting.
The 2nd of the 3 games didn't air within our TV lineup, so we headed over to Popkin Tavern for a few brews in honor of St. Patrick's Day weekend while we watched the game. Mary had a hankering for something sweet and was brave enough to try a "beer float."
She said she liked it — I even tasted it and while it was something really different, it didn't taste all that bad. We both agreed we won't be trying to recreate it at home anytime soon, but it was a fun novelty drink to order just to say we tried it.
I whipped up a bunch of new recipes over the weekend per usual, but one of the more fun meals we made was this pizza to have while we watched the final of the 3 VCU games yesterday:
We added a homemade tomato sauce with slices of fresh mozzarella, pepperoni, kalamata olives and fresh basil to a rolled out whole wheat pizza dough and let it sizzle in the oven for just under 20 minutes — everything came from our latest Relay Foods order and man was it simple to make and good to eat.
We went into a brief panic mode yesterday morning when we realized we didn't have any coffee beans left to make coffee with. Then we realized the new Black Hand Coffee location is up and running just a few blocks away:
We're both thankful we can toss on some shoes and walk to a locally owned coffee shop if we need to.
Basil saw another Fan cat on the walk back:
Always a big moment for him when this happens. Note the two raised backs...
In other weekend news, we also ran around and took care of a few more weddings details, like finalizing the plans for the rehearsal dinner and beginning to look at suits for my side of the wedding party. It's getting close!
Oh yeah, and just in case you're having a case of the Mondays, Basil wanted to pop in to let you know he knows how you feel:
P.S. There's still time to enter for a chance to win one of 3 sets of rhinestone earrings from Mary's jewelry collection. Find all the details and enter here.
